  • 1 cup rice flour (brown or white)
  • 1 egg
  • 2 teaspoons baking powder
  • dollop of low fat yoghurt
  • milk of choice
  • 2  bananas mashed
  • handful of sultanas
  • grated rind of 1 lemon or 1 teaspoon cinnamon or nutmeg



  1. Combine the dry ingredients in a bowl.
  2. Add sultanas, mashed bananas, yoghurt and beaten egg.
  3. Add enough milk to moisten.
  4. Place in greased muffin pans and bake in a moderate oven for 30 – 40 mins depending on size (these time are approximate).
