MAPLE SYRUP & PECAN PUDDING

INGREDIENTS:

  •  200 grams pecans
  • 100 grams almond meal
  • 2 eggs
  • 1 banana, chopped
  • 2/3 cup pure maple syrup

DIRECTIONS:

  1. Grease 4 ramekins.
  2. Reserve about 12 pecans, place the remaining nuts in a food processor and process until finely             ground. Add almond meal, eggs, banana and ¼ cup syrup. Process for about 2 minutes or until             well combined.
  3. Spoon the mixture into the greased ramekins and smooth the mixture. Place on a baking tray and           bake in a 200ºc oven for 15-20 minutes or until cooked.
  4. Meanwhile bake the reserved pecans in oven for 3-4 minutes or until golden, cool, finely chop.
  5. To serve turn out the puddings onto serving plates drizzle over the remaining maple syrup and                sprinkle over the nuts, serve with either ice cream or yoghurt.

 

NB I would only serve this dessert on a special occasion.
